I made these tonight for breakfast for the rest of the week.  I mixed together half of a red onion (chopped), half of a red pepper (chopped), 4 green onions (chopped), 1 cup of ham (diced), 1/2 cup of cheddar cheese and 8 eggs.  I layered the bottom of cupcake tins with pieces of 2 baked potatoes; filling the rest of the tins with the egg mixture.  Then put them in the oven at 350 degrees Fahrenheit  for 20 minutes.
